• 1 (14 oz) can salmon, drained and flaked (or ~1½ cups cooked salmon)
• 1 egg 🥚
• ¼ cup breadcrumbs (panko or regular)
• 2 tbsp red onion, finely chopped
• 2 tbsp fresh parsley, chopped 🌿
• 1 tbsp fresh dill or mint (optional)
• Zest of ½ lemon + 1 tbsp juice 🍋
• 1 clove garlic, minced
• Salt & pepper to taste
• 1–2 tbsp olive oil (for pan frying)

🔥 Instructions
- Mix the Patties
• In a bowl, combine flaked salmon, egg, breadcrumbs, onion, herbs, lemon zest & juice, garlic, salt, and pepper.
• Mix well until it holds together. Form into 6 small patties. - Cook the Patties
• Heat olive oil in a nonstick pan over medium heat.
• Cook patties for 3–4 minutes per side, until golden and crispy. - Serve It Up
• Serve warm with tzatziki and salad, or stuff into pita bread for a Mediterranean-style sandwich.
