  • Ingredients
  • For the Crust:
  • 1 cup graham cracker crumbs
  • 2 tbsp granulated sugar
  • 4 tbsp unsalted butter, melted
  • For the Cheesecake Filling:
  • 8 oz cream cheese, softened
  • ΒΌ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp sour cream
  • For the Berry Swirl:
  • Β½ cup mixed berries (strawberries, blueberries, or raspberries)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • Instructions
  • Step 1: Prepare the Berry Swirl
  • In a small saucepan over medium heat, combine the berries, sugar, and lemon juice.
  • Cook until the berries break down and the mixture thickens slightly (about 5 minutes).
  • Strain the mixture through a fine mesh sieve to remove seeds, then let it cool completely.
  • Step 2: Make the Crust
  • Preheat your oven to 325Β°F (160Β°C) and line a mini muffin pan with paper liners or grease it well.
  • In a bowl, combine the graham cracker crumbs, sugar, and melted butter.
  • Press about 1 tsp of the crust mixture into the bottom of each muffin cup.
  • Bake for 5 minutes, then set aside to cool.
  • Step 3: Cheesecake Filling
  • In a mixing bowl, beat the cream cheese and sugar until smooth and creamy.
  • Mix in the egg, vanilla extract, and sour cream, blending until combined.
  • Step 4: Assemble the Cheesecake Bites
  • Spoon the cheesecake filling over the cooled crusts, filling each cup almost to the top.
  • Add small dollops of the cooled berry swirl mixture on top of the cheesecake filling.
  • Use a toothpick or skewer to gently swirl the berry puree into the cheesecake for a marbled effect.
  • Step 5: Bake
  • Bake the cheesecake bites for 12–15 minutes, or until the centers are just set.
  • Allow them to cool to room temperature, then chill in the refrigerator for at least 2 hours before serving.
