- 1 cup graham cracker crumbs
- 2 tbsp granulated sugar
- 4 tbsp unsalted butter, melted
- For the Cheesecake Filling:
- 8 oz cream cheese, softened
- ΒΌ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp sour cream
- For the Berry Swirl:
- Β½ cup mixed berries (strawberries, blueberries, or raspberries)
- 2 tbsp granulated sugar
- 1 tsp lemon juice
- Instructions
- Step 1: Prepare the Berry Swirl
- In a small saucepan over medium heat, combine the berries, sugar, and lemon juice.
- Cook until the berries break down and the mixture thickens slightly (about 5 minutes).
- Strain the mixture through a fine mesh sieve to remove seeds, then let it cool completely.
- Step 2: Make the Crust
- Preheat your oven to 325Β°F (160Β°C) and line a mini muffin pan with paper liners or grease it well.
- In a bowl, combine the graham cracker crumbs, sugar, and melted butter.
- Press about 1 tsp of the crust mixture into the bottom of each muffin cup.
- Bake for 5 minutes, then set aside to cool.
- Step 3: Cheesecake Filling
- In a mixing bowl, beat the cream cheese and sugar until smooth and creamy.
- Mix in the egg, vanilla extract, and sour cream, blending until combined.
